
This is a new, fastest way to cook sausage.
The normal way of cooking whole links of sausages takes to long. Most of the time you get burned outside with a raw center. My new way of cooking sausage is better.
Get one pound, five links, of medium or hot Italian sausage. Cut the sausage into one and half inch pieces. Do not remove the casing, otherwise you will get a meet mess and you will be cooking hamburgers instead of meet balls.
Pour EVOO (Extra Virgin Olive Oil) into a medium size pot. About two table spoons or enough to cover the bottom. Do not use a skillet. Instead use pot with heavy bottom for even searing and high walls to avoid splatter of oil. Heat the pot on medium high for a minute or so. Drop in the cut up sausage. Sear and cook for about ten minutes, frequently stirring the contents with spatula, tongs or just shaking the pot in a rotary horizontal motion to prevent sticking.
Turn off the heat, pickup the sausage balls with tongs or spoon and put on a serving plate. Do not just pour the contents on a plate or you will get major grease balls instead.
Serve while hot with cold deli style pickles or cold sauerkraut. Claussen brand is the best and closest to authentic European style. Please dot use the relish or hot sauerkraut because they do not fit with my sausage balls.
